Grain-free paleo spicy maple granola
I created this is delicately spiced granola as an alternative to the (often) high sugar shop-bought versions.
It’s a delicious replacement for cereal, served with milk (cows, goats, almond, oat… whatever you like). I often have it as a snack with coconut yogurt, berries, and a sprinkle of raw cacao nibs for a little chocolatey twist.
Ingredients
2 cups of coconut flakes
½ cup each of hazelnuts, walnuts, Brazil nuts, almonds, pecans, & macadamias roughly chopped
¼ cup each of sunflower, pumpkin, black & white sesame, & chia seeds
¼ cup eat of hemp hearts & buckwheat groats
2 tbls of freshly ground flax seeds or hemp flour
1 tbl coconut sugar
2 tsps cinnamon
1 tsp ground ginger
1 tsp ground cardamom
1 tsp Himalayan or sea salt
3 tbls coconut oil
¼ cup of maple syrup
1 tsp vanilla paste
Method
Heat oven to 100 degrees C - Roughly chop the nuts
Put all ingredients apart from oil, syrup & vanilla in a big bowl and mix.
Warm the coconut oil, maple syrup & vanilla, combine together then pour over nut/seed mixture.
Mix well, coating all the nuts & seeds with oil and syrup
Spread the mixture thinly on 2 lined baking sheets (they’ll stick like glue to the baking sheet without the baking paper!)
Bake for about 20 mins increase the temperature to 160 degrees C bake for another 10 - 15 minutes, checking to make sure it doesn’t burn.
Allow to cool completely and store in an airtight container.
